Vegan Almond Green Beans

This is a very flexible and delicious recipe that can work with other veggies too, like mushrooms or shallots.

  • 2 1/4 pounds green beans, ends trimmed
  • 1-2 tablespoons extra-virgin olive oil
  • 3 large red bell peppers, thinly sliced
  • 1 large onion, thinly sliced
  • 3/4 cup almonds
  • 1/4 cup chopped fresh marjoram (dried is okay too)
  • 2 tablespoons Earth Balance, or other non-dairy butter


  1. Boil green beans in large pot of boiling salted water until just crisp-tender, 5-10 minutes. (You can also steam them.) Drain. Rinse with cold water. Drain well. Set aside.
