Breakfast Potatoes

Ingredients

  • 3 cups potatoes, sliced
  • 1 large yellow onion, diced
  • 1 medium tomato, diced
  • 1 red bell pepper, diced
  • 1 cup spinach
  • 2 cloves garlic, chopped
  • 2 to 3 tbsp. olive oil
  • Garlic salt
  • Black pepper
  • Dash of paprika

Instructions

Preheat the 2 tbsp. olive oil on medium-high heat. Add the potatoes and green pepper, coat them in olive oil. Cook for about 3 minutes.
Add the onions, garlic, salt, pepper, and paprika to the skillet. Cook until all of the veggies begin to get tender, 8 to 10 minutes (maybe longer).
Stir in tomatoes and spinach and cook for another 5 minutes or so, adding spices as desired.
